Ingredients:

  • ½  small papaya
  • 2 tsp oil 
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • Pinch of asafoetida
  • 2-3 green chillies slit
  • ¼ tsp salt
  • ½ tsp sugar
  • 2 tsp lemon juice

Preparation:

  1. To prepare raw papaya chutney, you just need to grate some papaya or peel the entire papaya into thin strips,using vegetable peeler. 
  2. Heat oil in a pan/ kadhai, add mustard and cumin seed to the hot oil. Stir and add asafoetida and green chillies. 
  3. Then add the grated papaya and salt. Stir on a high flame for 1-2 minutes. 
  4. Sprinkle some water after lowering the flame and cook for 5 minutes till the papaya softens and turns translucent.
  5.  Sprinkle some sugar and pour in the lemon juice. Give it a good mix for 30 seconds on high flame and then remove it from heat.
  6. Chutney can be kept for 2-3 day in a refrigerator in an airtight container.

Ingredients:

  • 2 cups whole wheat flour
  • 2 cups papaya
  • ½ tsp salt
  • 2 tsp oil
  • 2 tsp coriander leaves
  • 1 chopped green chilli
  • ½ tsp garam masala
  • 1 tsp amchoor powder
  • ½ tsp fennel powder

Preparation:

  1. Mix flour,salt and oil in a bowl to make a soft dough.
  2. Cover the dough and keep it for 20-30minutes.
  3. Grate the papaya and add salt to it and mix well. 
  4. Keep it aside for 10-15minutes so that the papaya leaves its water.
  5. Squeeze out the rest of the water.
  6. Add all the spices and coriander leaves and mix well.
  7. Divide the dough into balls of equal portion.
  8. Roll the dough into a 5inch disc and add the filling in the centre and then bring the corners together.
  9. Again dust the dry flour and gently roll to make a large disc.
  10. Heat a griddle.
  11. Transfer the paratha to the hot griddle.

Ingredients:

  • 1 small sized papaya
  • 1 cup boiled sweet potato

  • ½ tsp garam masala

  • 1 tsp cumin powder

  • 1-2 tsp coriander leaves
  • 2 tsp oats flour
  • 1 tsp chaat masala

Preparation

  1. Take a bowl, put grated papaya and add boiled and mashed sweet potatoes. 
  2.  Add all the spices and oats flour in the mixture.
  3. Mix all the spices with papaya and sweet potato to make a dough.
  4. Divide the dough in equal parts and make small round patty shaped kebabs.
  5. Heat oil in a pan over medium flame.
  6. Put kebabs in the hot pan and cook on a medium to low heat, until it turns golden from the bottom.
  7. Flip the side gently with spatula and cook till it turns golden and crisp.
  8. Remove the cooked kebabs on a plate covered with tissue paper.
  9. Cook the remaining kebabs the same way.

4.  Som Tam or Raw Papaya Salad Recipe

Ingredients

  • 2 cups papaya grated
  • 1 Thai red chilli cut in segments and deseeded.
  • 1 tsp chopped garlic
  • ½ diagonally chopped and parboiled French beans
  • ½ cup carrot grated
  • 2 tsp chopped coriander leaves
  • 2 tsp chopped basil
  • ½ cup cherry tomatoes halves
  • ¼ crushed roasted peanuts.

For dressing mixture

  • ¼ cup tamarind pulp
  • ½ tsp honey
  • ¼ tsp soy sauce

Preparation:

  1. In a mortar-pestle, combine chillies, garlic, french beans and pound till it is lightly crushed.
  2. Add carrot and pound for 1-2 minutes till it is lightly crushed.
  3. Add the papaya and pound for a minute and then toss well for a minute using 2 forks.
  4. Also, Add the dressing and the coriander, basil,cherry tomatoes and salt and toss well.
  5. Garnish with peanuts and serve the salad immediately.

5.  Raw Papaya Recipe South Indian- Kootu/ Molagootal

Molagootal is a South indian recipe which is cooked with a mixture of raw papaya and tur dal. It is a very popular dish in the Palakkad cuisine of Kerala. Kootu/ Molagootal is made using roasted spices along with coconut and cooked vegetables. Raw papaya Kootu is usually eaten with cooked rice, lemon pickle and a roasted papad. 

Raw Papaya Kootu recipe:

Ingredients:

  • 1 small papaya
  • ½ cup tur dal
  • ½ tsp turmeric
  • 1 tsp oil
  • ½ salt
  • ½ TSP black peppercorns
  • 1 tsp cumin seeds
  • 3-4 dried red chillies
  • ¼ cup dessicated coconut
  • 1 flake tamarind

  For tempering

  • 2 tsp coconut oil
  • 1 dried red chilli
  • ½ tsp mustard oil
  • 1 tsp urad dal
  • 1 sprig curry leaves

Preparation:

  1. Peel the raw papaya and cut it into small dice.
  2. Boil 2 cups of water and add salt and turmeric to it. Add the diced papaya and boil for 15 minutes.
  3. On another flame pressure cook tur dal with 1.5 cup water and add a pinch of turmeric. Mash well and keep it aside.
  4. Heat 1 tsp oil in a pan for spice paste. Fry pepper, cumin and red chillies. Add coconut and tamarind and toast or lightly for 1 minute.
  5. Combine mashed cooked tur dal and cooked papaya and the freshly ground spices paste in a cooking pan. Add salt to it and bring to a simmer by adding little water to get a pouring consistency. Transfer the content to a serving bowl.
  6. Heat coconut oil in a small pan and add red chilli, mustard seeds, urad dal and curry leaves to it. Transfer the tempering to the prepared Kootu.
  7. Serve hot with rice.

    6.  Raw Papaya Kofta

This grated raw papaya recipe is so tempting that if you try it for once then this will become your first choice for making kofta. Grated raw papaya are mashed together with potatoes and then deep fried to make a crisp koftas.

Grated raw papaya kofta recipe:

Ingredients: 

  • 1 ½ cup grated raw papaya
  • 1 cup boiled and mashed potatoes
  • ½ tsp turmeric powder
  • 1 tsp dried mango powder
  • 1 tsp chilli powder
  • Salt to taste
  • 1 tsp garam masala
  • Oil for deep frying

   For gravy

  •  2 tsp oil
  • ½ tsp cumin seeds
  • 1 tsp chopped cashews
  • 1 cup chopped onions
  • ½ tsp chopped garlic
  • ½ tsp chopped ginger
  • 2 cups chopped tomatoes
  • 1 slit green chilli
  • ½ tsp coriander powder
  • ½ tsp chilli powder
  • ¼ tsp turmeric powder
  • ¼ tsp garam masala
  • Salt to taste
  • 2 tsp fresh cream
  • 2 tsp finely chopped coriander leaves

Preparation:

  1. Squeeze the grated papaya to remove all the water. Transfer the papaya in a bowl and add all  the remaining ingredients and mix well.
  2. Divide the mixture into equal portions to make balls for kofta.
  3. Heat the oil in a deep non stick pan/ kadhai.
  4. Put the balls in the oil and deep fry on medium flame, till they turn brown from all sides.
  5. Remove the ball from the pan on an absorbent paper to soak extra oil.
  6. For gravy, heat 1tsp oil and add cashews to it and saute it for 1 minute.
  7. Remove the cashews from the pan and blend them to a smooth paste. Keep aside.
  8. Heat the remaining 1tsp oil and add cumin seeds and when the seeds crackle, add onions and saute for 2 minutes.
  9. Add tomatoes,ginger garlic and all the spices and cook for 2 minutes. Stir occasionally.
  10. Add the prepared cashew paste, fresh cream and 1cup of water, mix well and cool for 5 minutes.
  11. Add koftas to gravy, mix gently and cook for 2minutes on medium flame. 
  12. Garnish with chopped coriander.

     7.  Raw Papaya Recipe Bengali style curry

Pepe Chechki is a Papaya curry cooked in Bengali style. This authentic curry is cooked with urad dal and minimal spice. It is best accompanied with chapati.

Chechki means dry in Bengali. For the non vegetarian version, prawn or fish head is added to the dish.

  1. Heat oil in a pan and fry vadis till golden brown till brown.
  2. In the same oil, add panch phoron and green chillies.
  3. Add the grated papaya, salt and turmeric powder. Mix well and cook.
  4. If required, water can be sprinkled at intervals.
  5. Add the ghee and coriander leaves when done. 
  6. Serve with chapati.
